
If you’ve just been diagnosed, I know you’re scared. How else would you feel?
Or maybe, you’ve just been told that the cancer returned. WTH???
Or perhaps you’re considered NED – No Evidence of Disease. But you know you’re not ‘cured’ – you’re just in a state of “so far, so good.”
Maybe you’re a family member or friend of someone who is trying their best to survive this horrible disease….and you wish you could help increase their likelihood of sticking around as long as possible.
So what can you do to avoid becoming frozen with the fear of the unknown?
Fight back.
One of the best changes a breast cancer survivor can make in the daily diet is to consume at least one type of cruciferous veggie each day. Cruciferous vegetables include; broccoli, cauliflower, kale, collards, mustard greens, turnip greens, beet greens, and even radish greens. These power-veggies contain loads of cancer-fighting phytochemicals(this means “natural chemicals found in plants”) – more than in any other vegetable family. Even doctors who think alternative medicine is hocus-pocus will admit that scientific evidence proves the effects of cruciferous vegetables. For example, the more frequently a population consumes cruciferous veggies, the lower the incidence of colon, lung, breast, and prostate cancer in those populations.
Kale is a veggie that many of us have not consumed frequently. Mainly, we see it as a decoration on a plate at a restaurant. But it is actually very good, and you can eat the whole thing – stem and all. Just be sure to chop the stems into small pieces.
This is a very pretty salad that you can make 1 day in advance, making it perfect for taking to a Thanksgiving dinner. Normally I make it with a red apple during the holidays, because I love the look of red and green in the salad. But you can use any kind of apple you want.
Kale and Apple Salad
1 small bunch of kale, chopped into bite-size pieces
1 apple, cored and chopped
1/2 c. raisins of your choice
1/2 c. chopped raw walnuts
3 small cloves garlic, minced (or 1 tsp. garlic powder)
1/2 c. apple cider vinegar
1/2 c. olive oil
1-2 tbsp. honey or 3 drops liquid stevia or 1 packet of NuStevia
Put first 4 ingredients into bowl. Put next 4 ingredients into a jar with lid and shake vigorously. Pour over salad mixture. Let sit at least an hour, then toss again. If making ahead of time, be sure to toss just before serving.
