
Need a unique side dish for your Halloween spread? The combination of purple potatoes and black accents gives this potato salad a mystical look and a hypnotizing taste.
Although there are a few ingredients here that may be new to you, once you’ve gathered them the dish will come together very quickly. To make things easier, almost all ingredients require 2 tablespoons.
So what exactly are those ‘black accents’?
First, we have black sesame seeds. The tiny sesame seed is loaded with a crazy amount of B-vitamins and minerals.
Next, we have sea vegetables.
What? Sea vegetables? Lisa, are you serious???
Yep. Sea vegetables are so good for you! Certain varieties have a very mild taste, such as wakame. Sea vegetables are one of the best foods you can eat to rid your body of toxins, particularly heavy metals. They are also extremely strong at deterring breast cancer and colon cancer.
We’re also adding ume plum vinegar, which not only adds fabulous flavor to this potato salad, but also has an alkalinizing effect on the body. This is a good thing, because illnesses begin when our bodies become too acidic (from eating junky foods).
Once you toss these ingredients with the purple potatoes, the sweet onion, and some tamari and tahini, you have a side dish that is addictingly spooky. Happy Halloween!
MIDNIGHT POTATO SALAD
(serves 6 as a side-dish)
5 large purple potatoes, diced (leave skins on)
1/2 of a sweet onion, chopped small
2 tbsp. ume plum vinegar
2 tbsp. tamari (I used chickpea tamari, which I order online from South River Miso)
2 tbsp. tahini
2 tbsp. black sesame seeds
2 tbsp. arame sea vegetable
Steam potatoes only until you can pierce them with a fork. (They should still be firm).
As soon as they are done, rinse them in cold water.
Meanwhile, mix wet ingredients.
Toss everything together and refrigerate. Chill at least 2 hours before serving.

I can’t wait to try Midnight Potato Salad! After all it has my favorite, purple potatos . . . not sure about the sea vegetables . . . . but I’ll give it the old college try!!

this sounds amazing. if i can’t find purple potatoes, what potato would you rec to substitute?
I would substitute red potatoes so it is still colorful.
